Mom's Cranberry Salad
1 bag fresh cranberries (12oz.)
1 Cup sugar
8 oz. container whipped topping
1/2 Cup (or more) chopped pecans
chop cranberries in food processor until small pieces. stir sugar into cranberries and let sit overnight in fridge. Mix in whipped topping and nuts before serving.
Enjoy!
I'm not sure when or where my mom got this recipe, but everyone loves it when she makes it. I love the idea of eating the fresh cranberries, so good for you! I have always loved cranberry juice, so when I tasted this the first time, I fell in love with it. The recipe calls for a full container of whipped topping, but I suppose you could use1/2 to 3/4 of the container instead to cut back on the calories and make it better for you. I have tried cutting back the sugar to 1/2 or 3/4 cup instead of the recommended 1 cup, and it makes a huge difference in the taste. Don't recommend it.

Delicious! Made it last night, with homemade "cool whip"(none of the chemicals!). SO VERY GOOD! Thanks for sharing!
